Description |
This is a top piece of a cast iron broiler. It is round with an offset handle. The center has a convex surface that is slotted in a triangular pattern. The slats are grooved to catch grease and there is a pouring spount on one side. |
Notes |
A double broiler is used to cook over an open fire. The base pan (see 1939.632.1) would rest in the ashes of a hearth or campfire. Food is placed on the top piece and grooves on the top piece would catch drippings from the food, preventing excessive smoking. |
